Inasal: Bacolod’s key to Culinary Fame

When one mentions the word “Bacolod food,” What instantly comes into our mind is the Chicken Inasal or the Chicken Bacolod as what people in the Metro Manila calls it.

Inasal, is an Ilonggo word from the root asal , meaning to grill. Thus inasal, can either be a chicken a pork, or fish.

But Bacolod became famous with the chicken variety. Chicken inasal is actually grilled chicked that has been marinated in calamansi (Philippine lemon), soy sauce, vinegar, lots of garlic, ginger, black pepper and some more secret ingredients.

Every part of the chicken is cooked as inasal. The most common are the chicken breast, thighs, wings, liver, gizzard, and intestines.

Chicken inasal’s pefect partner is the “Sinamak“. Sinamak is an Ilonggo dip made of vinegar, ginger, jalapeño pepper, chili, garlic, and some other spices.

The best place to eat the chicken inasal in Bacolod City, Philippines is at the Manokan Country. It is a long strip of road at the Bacolod Reclamation Area that sells the best inasal in town.

    I’ve never been to Bacolod… but now that I look at this picture, I sure miss the Chicken Bacolod in Jupiter St. (is it still there)? Whew! That is really really good!

    yeah i think its still there. but nothing beats the original inasal At the manokan country! u should try it! hehe

    wheeww namiss ko na ang inasal ah… 2002 ako umalis sa work ko sa bacolod… kumakain din kami sa mga inasal resto sa w/in metro manila pero iba pa rin ang inasal ng bacolod… lalo na nga sa manokan country… hayyyy

    —> yeah it’s still there. so sarap tlaga noh? cnt get enough of it nga eh. That’s why i make utos to my bf or my yaya to get some for me… But if im even so tamad to make utos, i just call up so they could make padala the chicken inasal. Bacolod Chicken Inasal is the best ever.
    what branches have u tried pa? aside from that of Jupiter St.?

    Ooh you have been in Jupiter St. branch of Bacolod Chicken Inasal. I have tried already their branch in Rob Place in Malate and Glorietta 4. And I really like their chicken inasal so much.

    @Marco, i havent tried the ones in jupiter. many so-called inasal houses here in manila (except for a handul of them) are not even close to the original inalsal flavor

    To Enrico:

    Are you against with Bacolod Chicken Inasal? I think they served really good and tasty dishes specially chicken inasal ones. In fact “chicken inasal” of Bacolod Chicken Inasal is really different from the traditional one.
