Bacolod Inasal

This is not the first time that I have written about Bacolod’s signature dish. But it is an inescapable fact that every time I go back to Bacolod City, I always crave for this grilled chicken.

Inasal

Inasal is actually a Hiligaynon term meaning barbecue. This means that the term inasal is not exclusive only for chicken breast and legs. Although these two variety are the most common. Chicken breast is called Pecho, but if the section contains wings it’s called Pechopak. The legs is called Pa-a (with the stress of the first syllable). Ther are other varieties of inasal like chicken pork or beef liver, chicken gizzard, chicken wings, pork ears, pork blood, pork skin and a whole lot more.

In Bacolod City there are a lot of restuarants offering inasal. There’s even a strip called Manukan Country. A row of small eateries offering the city’s best inasal. There are also upscale restos offering the grilled treat like Mang Inasal, Chicken House, and Chicken Deli.

And definitely Inasal should never be missed when going to the City of Smiles, especially during the city’s Masskara Festival.

    i think grilled in hiligaynon = sugba, sinugba

    inasal i guess parang na skewer… you can say inasal na hotdog or pandesal but it was not grilled hehehe

    but if you refer to chicken inasal…its grilled.

    Mang Inasal just opened a branch in Cebu City earlier this year.

    There are a lot of other “inasal” food shops in our Cebu too. :)
