Pancit Batil Patong and Pancit Cabagan: A tale of Two Pancit

Visiting Tuguegarao will never be complete without tasting the Pancit Batil Patong and the Pancit Cabagan. Pancit Batil Patong is a local delicacy of Tuguegarao City while the Pancit Cabagan is from the town of Cabagan in Isabela. But du to its distance, the Pancit Cabagan is also readily avilable in Tuguegarao City, and most panciterias offer both types of pancit.

Pancit Cabagan is usually made of stir fried noodles with vegetables like cabbage, sitsaro, crushed chicharon, quail eggs.

Pancit Batil Patong on the other hand is made of stir fried noodles, cabbage, Baguio beans, bean sprouts, sunny side up egg, crushed chicharon. For special orders slices of liver, meat, and hotdogs are added.

Another difference of Pancit Batil Patong is that is it always served with an egg soup. The word Batil is a local dialect meaning egg, while patong means to add the ingredients layer by layer.

There are a lot of Panciterias in Tuguegarao City offering Pancit Batil Patong, some of them also offer Pancit Cabagan. there are some that offers only one type of Pancit.

When I was in Tuguegarao City a few weeks back, I had the chance to sample these two local noodle dishes and among the two, I prefer the Pancit Batil Patong. Although I like the Batil Patong more, it doesn’t that I no longer like the Pancit Cabagan. I do like it but I palate just prefers the saltiness of the Batil Patong.

When I have the chance to go back to Tuguegarao, I would definitely feast on these two noodles again, and hopefully one day, will also find time to visit the home of the Pancit Cabagan in Isabela.
